By day we give this piece a name and a very firm shell: 75%, matte, unsmiling. At night the centre takes over — black cardamom, smoky and resinous, folded into a ganache that is far softer than it lets on. The finish is long, dark and a little commanding. The name stays on the step; the praline comes inside.
